Our sweet white
A fine growing season yielded small parcels of intensely aromatic and succulent Viognier.
Our inaugural Dulcis takes its name from the Latin phrase “Dulcis in Fundo” (sweet in the end). The inspiration for Dulcis is from the delicious, light-bodied, non botrytis-affected wines of the Southern Rhone Valley.
Perfumed, harmonious and delicious, Dulcis may be enjoyed as an aperitif, or the perfect accompaniment to any chilled fresh fruits, summer berries and magical with goats cheese.
In the words of Shakespeare “All’s well that ends well”.
The Vineyard
Viognier is grown expressly for Dulcis at our Willoughby Bridge Vineyard at Colbinabbin in Northern Heathcote. With a North to South row orientation, this vineyard is spur pruned to encourage a dense canopy to protect the fruit from the harsh afternoon summer sun. All rows are mulched naturally. This protection at the base of the vines reduces heat reflection and moderates the micro climate to make it milder within the vine canopy.
The Winemaking
In Vintage 2015, perfectly ripened Viognier grapes were hand-harvested, chilled, whole bunch-pressed and fermented in French oak casks. Juicy complex flavor profile and fine refreshing acidity.
Bottled in April 2015, only 300 cases made. (750ml)
